Mocha cupcakes recipe with espresso coffee glaze

Mocha cupcakes recipe with espresso coffee glaze

Mocha cupcakes are the dream of lovers of chocolate and coffee. If you can not start the day without a cup of coffee, you're in luck.
These mocha cupcakes have a subtle chocolate flavor, and are covered with a butter cream glaze flavored with espresso. In fact, I might suggest you take one of these cupcakes instead of your morning coffee.

For cupcakes:
½ cup of coffee at room temperature
1½ teaspoons of espresso powder
½ cup whole milk
1 teaspoon vanilla extract
189 grams of all-purpose flour
28 grams of cocoa powder without sugar
1 teaspoon baking powder
¼ teaspoon of salt
½ cup of unsalted butter
1 cup of granulated sugar
1 egg
For the glaze:
1 cup of unsalted butter
2½ cups of powdered sugar
1½ teaspoons of vanilla extract
1½ teaspoons of espresso powder
Dissolve the espresso powder in the coffee, and add the milk and vanilla. Reserve.
Mix flour, cocoa powder, baking powder, baking soda and salt. With a blender beat the butter and sugar for 3 minutes, add the egg and gradually add the mixture of flour and coffee.
Fill each layer with two thirds of the mixture. Bake 20 minutes at 180 ° C or until a toothpick comes out clean. Allow to cool completely.
For the glaze it is made exactly like a normal buttercream, but the coffee dissolves in the vanilla.
Decorate the cupcakes as you wish. And ready!
